摘 要:目的了解龙岩市市售食品中单核细胞增生李斯特菌的污染状况和耐药情况。方法2021—2022年采集市售生肉、生乳及乳制品、熟肉、冰激凌、水产品、生食蔬菜和寿司等7类460份食品样品,依据GB 4789.30—2016《单核细胞增生李斯特菌检验》对单增李斯特菌进行分离和鉴定。采用CLSI推荐的K-B法检测13种抗生素的耐药情况。结果460份食品中检出单增李斯特菌15株,总检出率3.3%;主要污染食品为生肉(6.5%)和水产品(4.0%);采样场所检出率农贸市场(5.4%)高于超市(1.8%);各季度样品中第三季度检出率最高(6.2%);定量检测生肉MPN值最高达290 MPN/g;15株单增李斯特菌对7种抗生素耐药,耐药率较高的是复方新诺明(53.3%)和红霉素(33.3%)。结论2021—2022年龙岩市市售生肉和水产品存在单增李斯特菌污染,且以第三季度污染尤为突出。相关部门应加强对食品卫生的监督管理,预防食源性疾病的发生,同时做好抗生素的管理和耐药性监测。Objective To understand the contamination and antimicrobial resistance of Listeria monocytogenes in commer-cial foods in Longyan.Methods Four hundred and sixty samples of seven categories of commercial foods(including raw meat,raw milk and dairy products,cooked meat,ice creams,aquatic products,raw vegetables and sushi)were collected from Longyan from 2021 to 2022.Listeria monocytogenes was isolated and identified according to National Food Safety Standard—Food Microbiological Examination—Examination of Listeria Monocytogenes(GB 4789.30-2016).The Kirby-Bauer disk diffusion susceptibility test recommended by CLSI was used to detect the resistance of Listeria monocytogenes to 13 antibiotics.Results A total of 15 strains of Listeria monocytogenes were detected,with a detection rate of 3.3%(15/460).The major contaminated foods were raw meat(6.5%)and aquatic products(4.0%).As for sampling sites,the detection rate of Listeria monocytogenes was higher in farmers'markets(5.4%)than that of supermarkets(1.8%).The de-tection rate of Listeria monocytogenes in samples collected from the third quarter was the highest(6.2%).Quantitative test found that the MPN value reached its highest value of 290 MPN/g in raw meat samples.Fifteen strains of listeria monocyto-genes were resistant to seven kinds of antibiotics,with higher resistance rates to cotrimoxazole(53.3%)and erythromycin(33.3%).Conclusion There was contamination by Listeria monocytogenes in raw meat and aquatic products sold in Longyan during 2021 to 2022,and it was particularly prominent in the third quarter.Relevant departments should strength-en food hygiene supervision and management to prevent the occurrence of foodborne diseases.And the management of anti-biotic use and surveillance of antimicrobial resistance should be well done.
