摘 要:采用GC-MS分别对哈氏仿对虾(Parapenaeopsis hardwickii)、刀额新对虾(Metapenaeus ensis)和细螯沼虾(Macrobrachium superbum)的脂肪酸组成进行了分析,并对它们的营养价值进行了评价。结果发现:3种虾的脂肪中共检测出21种脂肪酸,包含饱和脂肪酸7种;不饱和脂肪酸14种,其中4种为单不饱和脂肪酸(MUFA),10种为多不饱和脂肪酸(PUFA)。3种虾的饱和脂肪酸相对百分含量从高到低为:细螯沼虾(38.28%)>刀额新对虾(32.68%)>哈氏仿对虾(30.82%)。3种虾单不饱和脂肪酸相对百分含量最高的是细螯沼虾(31.05%),哈氏仿对虾次之(21.04%),刀额新对虾含量最低(17.3%)。3种虾的多不饱和脂肪酸相对百分含量都占30%以上,哈氏仿对虾、刀额新对虾和细螯沼虾都以二十二碳六烯酸(DHA)的含量最高。总的来说,这3种虾的PUFA和MUFA脂肪酸含量较高,虾的DHA+EPA含量也很丰富,有较高的食用价值。Parapenaeopsis hardwickii,Metapenaeus ensis and Macrobrachium superbum were analyzed by GC-MS,and their nutritional values were evaluated.The results showed that a total of 21 fatty acids were detected in the fat of 3 kinds of shrimp,including 7 saturated fatty acids.There are 14 kinds of unsaturated fatty acids,of which 4 are monounsaturated fatty acids(MUFA) and 10 are polyunsaturated fatty acids(PUFA).The relative percentage of saturated fatty acids of the three shrimp was as follows:M.superbum(38.28%)> M.ensis(32.68%) > P.hardwickii(30.82%).The highest relative percentage content of monounsaturated fatty acids of the three shrimp species was M.superbum(31.05%),followed by P.hardwickii(21.04%),and the lowest content of M.ensis(17.3%).The relative percentage content of polyunsaturated fatty acids in the three shrimp species accounted for more than 30%.Among the polyunsaturated fatty acids,Parapenaeopsis hardwickii,Metapenaeus ensis and Macrobrachium superbum were all the highest in docosahexaenoic acid(DHA) and the second in arachidonic acid(EPA).In general,these three kinds of shrimp have high PUFA and MUFA fatty acid content,and the DHA+EPA content of shrimp is also very rich,which has high edible value.
