摘  要:随着肉牛产业的发展,人们对牛肉质量的需求更加多样化。地方黄牛虽然抗逆性强、耐粗饲且肉质好,但普遍存在生长速度慢、胴体产肉少、脂肪沉积不理想和优质牛肉切块率低等缺陷。西门塔尔牛属乳肉兼用型品种,具有良好的产肉性能和生长发育性能,是世界多国主推品种,常用于本地牛的杂交改良。文章就西门塔尔牛对我国地方黄牛的体重、屠宰性能和肉质改良效果进行了归纳分析,以期为我国肉牛发展提供参考。With the development of the beef cattle industry,people's demand for beef quality has become more diverse.Although local Yellow cattle have strong resistance to adversity,tolerant to rough feeding,and good meat quality,they generally have many defects such as slow growth rate,low carcass meat production,poor fat deposition,and low cutting rate of high-quality beef.Simmental cattle belong to dairy-beef dual-purpose variety,with good meat production and growth performance,as well as good carcass yield.It is a major recommended variety in many countries around the world and is commonly used for crossbreeding and improvement of local cattle.The article summarized the improvement effects of Simmental cattle on the weight,slaughter performance,and meat quality of local Yellow cattle in China,in order to provide reference for the development of beef cattle in China.
