摘  要:[目的]研究江汉水牛的主要体尺指标和生产性能,为江汉水牛保种和开发利用提供理论依据。[方法]测定20头2.5岁左右、平均体质量(360±59)kg江汉水牛(公牛10头、母牛10头)的主要体尺指标,并进行134d的强度育肥试验。育肥结束后,选取12头江汉水牛(公牛6头、母牛6头)进行屠宰和肉质性能测定。[结果]江汉水牛育肥期平均日增质量为(818±189) g,平均日采食量为26.87 kg。江汉水牛屠宰率为45.4%,净肉率37.6%,眼肌面积85.7 cm^(2),肌肉嫩度平均为80.35 kg/cm^(2),肌肉肉色评分7.83,滴水损失1.17%,江汉水牛产肉成本为27.57元/kg。[结论]江汉水牛躯体高大,骨骼粗壮,肉质优良,是培育乳肉兼用水牛新品种的良好遗传素材。[Objectives]The main body size indexes and production performance of Jianghan buf-falo were studied to provide the theoretical basis for the conservation and utilization of Jianghan buf-falo.[Methods]The main body size indexes of 20 Jianghan buffalo(10 bulls and 10 cows)aged around 2.5 years old with an average body weight of(360±59)kg were measured.A 134-day ex-periment of intensive fattening was conducted.12 Jianghan buffalo(6 bulls and 6 cows)after fatten-ing were selected to measure the slaughtering performance and meat quality performance.[Results]The results showed that the average daily weight gain of Jianghan buffalo during the period of fattening was(818±189)g,and the average daily feed intake was 26.87 kg.The slaughtering rate,the net meat rate,the eye muscle area,the average meat tenderness,the muscle color score,the drip loss,and the meat production cost of Jianghan buffalo was 45.4%,37.6%,85.7 cm²,80.35 kg/cm²,7.83,1.17%,and 27.57 yuan/kg,respectively.[Conclusions]Jianghan buffalo has big body size,strong bones,and excellent meat quality,making it a good genetic material for breeding new varieties of buffalo that can be used for both dairy and beef.
