摘 要:为了明确腐烂苹果中的6种真菌毒素的含量及其迁移规律。采用超高效液相色谱-质谱技术(UPLC-MS/MS)结合超高效液相色谱(HPLC),通过对腐烂的阿克苏红富士苹果中交链孢酚-AOH(Alternariol)、交链孢酚单甲醚-AME(Alternariol monamethyl ether)、细交链格孢酮酸-TEA(Tenuazonic acid)、交链孢烯-ALT(Altenuene)、腾毒素-TEN(Tentoxin)、展青霉素-PAT(Patulin)6种毒素的产毒范围、产毒条件、检测方法及迁移规律等方面进行了相关研究。结果表明,交链孢毒素广泛存在于霉变的苹果中,且随着贮藏时间的延长毒素不断累积;扩展青霉产生展青霉素的最适温度为20~25℃,且随着培养时间的延长,产毒量呈现增加的单峰性变化趋势,同时高湿条件有利于展青霉素的产生。Fuji apple in the growth,harvesting,transportation,processing and storage,and a series of process,vulnerable to infection of pathogenic microorganisms and decay,apple postharvest decay caused by pathogens had cross-linking of spore(Alternaria alternata)and the expansion of Penicillium(Penicillium expansum);Chain spore mold toxin was a series of metabolites produced by chain,spore fungus:cross-linking cross-linking spore of phenol(Alternariol AOH),spore phenol monomethyl ether(Alternariol monamethyl,AME)cross-linking,fine lattice spore keto acid(Tenuazonic acid,TeA),cross-linking spore ene(Altenuene,ALT),teng toxin(Tentoxin,TEN);Extension Penicillium(Penicillium expansum l.)would produce a toxic metabolite,namely patulin(PAT).Rotten apple not only caused huge economic losses,but also in the accumulation of a large number of fungus toxin in apple.Fungal toxins through the food chain transfer bring great threat to the health of people or animals.In this paper,the apple in the common type,enterotoxigenic strains of fungus toxin,infection way and toxin-producing conditions,toxic effects,such as detection method for the related research,provided a reference for apple mycotoxins in control.
