摘 要:目的:研究非油炸面制品中甲醛次硫酸氢钠的快速提取方法。方法:采用超声样品前处理提取方法,盐酸副玫瑰苯胺法比色测定甲醛次硫酸氢钠含量,并与《小麦粉与大米粉及其制品中甲醛次硫酸氢钠含量的测定》(GB/T 21126—2007)前处理提取方法进行结果对比分析。结果:非油炸面制品中甲醛次硫酸氢钠快速超声提取条件为超声功率200 W,提取温度60℃,提取时间10 min。在最优超声提取条件下的甲醛次硫酸氢钠的平均回收率(91.5%)与国标提取方法的平均回收率(91.2%)相当。结论:超声提取方法简单、快速、精密度好、回收率高,可作为非油炸面制品中甲醛次硫酸氢钠测定的快速提取方法。Objective:To study the rapid extraction method of sodium formaldehyde sulfoxylate from non fried flour products.Method:The content of sodium formaldehyde bisulfite was determined by para-rosaniline hydrochloride colorimetric method.The results were compared with those of GB/T 21126—2007.Result:The conditions for rapid ultrasonic extraction of sodium formaldehyde sulfoxylate from non fried flour products were as follows:ultrasonic power was 200 W,extraction temperature was 60℃,extraction time was 10 min.The average recovery rate of formaldehyde sodium bisulfite under optimal ultrasonic extraction conditions(91.5%)was similar to that of national standard extraction method(91.2%).Conclusion:Ultrasonic extraction method is simple,rapid,accurate and high recovery,and can be used as a rapid extraction method for the determination of sodium formaldehyde sulfoxylate in non friedflour products.
