摘  要:甜蜜素是广泛使用的甜味剂,但过量使用具有一定的安全风险,准确检测食品中甜蜜素含量至关重要。本文通过建立数学模型,对高效液相色谱(High Performance Liquid Chromatography,HPLC)测定雪糕中甜蜜素含量的不确定度进行评价,分析检测结果中不确定度的主要来源,确定各不确定度分量,综合评定甜蜜素含量的测量不确定度。分析结果表明,所测雪糕甜蜜素的含量超出规定值,为0.746 g·kg^(-1),其扩展不确定度为0.068 g·kg^(-1)。Cyclamate is a widely used sweetener,but its excessive use has certain safety risks,so it is very important to accurately determine the content of cylamine in food.In this paper,a mathematical model was established to evaluate the uncertainty of the determination of cyclamate content in ice cream by high performance liquid chromatography(HPLC).The main sources of the uncertainty of the detection results were analyzed,and the components of the uncertainty were determined,the measurement uncertainty of saccharin content has been comprehensively evaluated.The analysis results showed that the content of cyclamate in the measured ice cream exceeded the specified value,which was 0.746 g·kg^(-1),and its extended uncertainty was 0.068 g·kg^(-1).
