基　　金：酱香型白酒陈酿复合香气特征风味物质基础及其形成调控机制研究(国家自然科学基金)。

摘　　要：“国槐”木酒海作为一种特殊的贮酒容器,在贮存老熟过程中会赋予白酒独特的风格特点。为解析木酒海贮存老熟金徽酒的挥发性组分特征,本研究综合采用顶空固相微萃取、液液萃取和液液萃取结合正相硅胶色谱分离技术3种前处理方法,结合全二维气相色谱-飞行时间质谱分析技术对木酒海贮酒和陶坛贮酒的金徽酒的挥发性组分进行分析。通过多级鉴定策略在“国槐”木酒海贮存老熟金徽酒中检测出挥发性组分841种,包括萜类化合物87种、芳香族化合物140种、含氧杂环类化合物73种;进一步分析木酒海贮酒特有的271种物质并对其香气属性进行梳理发现,其中有154种潜在香气活性化合物,除醇、酯、醛酮等骨架成分外,还有如萜类、芳香族等微量物质。本研究有助于促进对木酒海贮酒挥发性组分的认识,为解析其独特的香气特征提供一定的研究基础。As a special Baijiu storage container,the wood Jiuhai will give the liquor body a unique style during the aging process.In order to analyze the volatile components of Jinhui Liquor stored in the wood Jiuhai,headspace solid-phase microextraction,liquid-liquid extraction,liquid-liquid extraction combined with normal phase silica gel chromatography,and comprehensive two-dimensional gas chromatography/time-of-flight mass spectrometry were used to determine the volatile components of Jinhui Liquor stored in the wood Jiuhai and the pottery jars.841 volatile substances were identified in Jinhui Liquor stored in the wood Jiuhai by multistage identification strategy,including 87 terpenoids,140 aromatic compounds and 73 oxygen-containing heterocyclic compounds.Further analysis of the 271 unique substances in Jinhui Liquor stored in the wood Jiuhai showed that there were 154 potential aroma active compounds.Besides skeleton components such as alcohols,esters,aldehydes and ketones,there were many trace substances such as terpenoids and aromatic compounds.This study is helpful to promote the understanding of the volatile components of Baijiu stored in the wood Jiuhai,and has provided a certain research basis for analyzing its unique aroma characteristics.
