摘 要:研究了利乐梦幻盖类产品在生产过程中充氮工艺的最佳工艺参数。以产品包装完美性评价为指标,采用单因素试验分析充氮时间、充氮压力、充氮喷嘴清洗间隔对产品包装完美性评分的影响,通过响应面试验确定了利乐梦幻盖类产品无菌罐装工序中充氮工艺的最佳参数为充氮时间6.94 s,充氮压力2.0 Pa,充氮喷嘴清洗间隔7 d。在此工艺条件下生产的梦幻盖产品包装完美性评分为90.3分,该工艺条件下生产的产品具有包装干净整洁、完美性良好、储存时间较长、运输过程不易被损坏等特点。试验结果减少了产品的质量问题和市场相关投诉,可为乳品无菌罐装工序的充氮工艺改善提供数据支撑。The optimal process parameters of nitrogen filling process in the production process of Tetra Pak Dream Cap products were studied.The effects of nitrogen filling time,nitrogen filling pressure and nitrogen filling nozzle cleaning interval on product packaging perfection score were analyzed by single factor test as the index.The optimal parameters of nitrogen filling process in the aseptic canning process of Tetra Pak Dream Cap products were determined by response surface test:nitrogen filling time was 6.94 s,nitrogen filling pressure was 2.0 Pa,and nitrogen filling nozzle cleaning interval was 7 d.The packaging perfection score of the dream cover product produced under this process condition is 90.3 points,and the products produced under this process condition have the characteristics of clean and tidy packaging,good perfection,long storage time,and not easy to be damaged during transportation.The test results reduce product quality problems and market-related complaints,which can provide data support for the improvement of nitrogen-filled process in the aseptic canning process of dairy products.
