摘 要:香精微胶囊能有效提高香精芯材的稳定性并延缓释放,而香精微胶囊壁材对其性能及应用有重要的影响。综述用于制备香精微胶囊的不同壁材,包括天然高分子材料、半合成高分子材料以及合成高分子材料,重点分析不同材料的优缺点以及对香精微胶囊制备及应用的影响,并对香精微胶囊壁材发展趋势进行展望,指出应根据实际要求选取合适壁材并将多种材料结合开发高性能壁材。Flavor microcapsules can effectively improve the stability of the flavor core and delay the release,while the flavor microcapsule wall material has an important impact on its performance and application.The different wall materials used to prepare flavor microcapsules were reviewed,including natural polymer materials,semi-synthetic polymer materials and synthetic polymer materials.The advantages and disadvantages of different materials and their impact on the preparation and application of flavor microcapsules were analyzed,while the development trend of wall materials of flavor microcapsules was prospected.It was pointed out that suitable wall materials should be selected according to the actual requirements and a variety of materials should be combined to develop high-performance wall materials.
