不同禽类蛋清蛋白质的婴幼儿体外消化特性差异研究

摘  要:禽蛋类是满6月龄婴幼儿较常添加的蛋白质类辅食,本研究通过体外模拟婴幼儿胃肠消化过程,比较不同禽类蛋清蛋白质的消化特性。研究结果表明:单位质量鸡蛋清可为婴幼儿提供的蛋白质高于鸭蛋清、鹅蛋清、鹌鹑蛋清和鸽蛋清。婴幼儿对鸡蛋清蛋白质的胃消化率(48.7%)和胃肠两步消化率(84.1%)是5种禽蛋清中最高的,鸽蛋清蛋白质的胃消化率(39.2%)和胃肠两步消化率(70.5%)最低。经胃肠两步消化后的鹅蛋清(81.4%)、鹌鹑蛋清(80.2%)和鸭蛋清(76.4%)的蛋白质消化率介于鸡蛋清和鸽蛋清之间。5种蛋清的蛋白质消化率与其消化产物氨基酸得率呈显著正相关(P<0.05),与消化前、后的可溶性蛋白质粒径大小呈显著负相关。因此,建议为婴幼儿优先选择添加鸡蛋清,其次选择添加鹌鹑蛋清和鹅蛋清,最后才选择添加鸭蛋清和鸽蛋清,该研究为给婴幼儿合理添加蛋类辅食提供科学依据。Poultry egg is a kind of protein supplementary often added to six-month-old infants complementary food.In this study,the digestive capability of different poultry egg white proteins were compared by simulating the gastrointestinal digestion process of infants in vitro.The results show that the protein provided by hen egg white per unit weight was more than that provided by duck egg white,goose egg white,quail egg white and pigeon egg white.The gastric digestibility(48.7%)and gastrointestinal two-step digestibility(84.1%)of hen egg white protein in infants were the highest among the five kinds of poultry egg whites,while the gastric digestibility(39.2%)and gastrointestinal two-step digestibility(70.5%)of pigeon egg white protein were the lowest.The protein digestibility of goose egg white(81.4%),quail egg white(80.2%)and duck egg white(76.4%)were between that of hen egg white and pigeon egg white.There was a significant positive correlation between protein digestibility and amino acid yield,and a significant negative correlation between protein digestibility and soluble protein particle size.Therefore,it is suggested to give priority to add hen egg white for infants,followed by quail egg white and goose egg white,and finally duck egg white and pigeon egg white.The finding provides scientific basis for reasonably adding egg complementary food for infants.
