小麦粉及其制品中铝本底含量测定及铝污染控制分析

摘　　要：通过调查研究小麦、小麦粉及其制品中铝本底含量,制定小麦粉及其制品中的铝本底参考值,并对不同地区的小麦、小麦粉及其制品中的铝含量进行比较和分析。结果表明:山东泰安小麦粉的铝本底含量平均值为4.36 mg/kg,其数据分布在≤5区间样本数最多,为56个;小麦的铝本底含量平均值为25.8 mg/kg,其数据分布在≤30区间样本数最多,为30个。不同地区小麦、小麦粉及其制品铝含量不同,其中北京、河北地区含量较低,而河南地区含量较高。泰安小麦粉及其制品中的铝本底含量参考值≤16 mg/kg。By investigating the aluminum background content in wheat,wheat flour and its products,the reference value of aluminum background in wheat flour and its products was established,and the alumi-num content in wheat,wheat flour and its products in different regions was compared and analyzed.The results showed that the average aluminum background content of wheat flour in Tai'an,Shandong was 4.36 mg/kg,and the number of samples distributed in the range of≤5 was the largest,with 56 sam-ples.The average aluminum background content of wheat was 25.8 mg/kg,and the number of samples distributed in the range of≤30 was the largest,with 30 samples.The aluminum content of wheat,wheat flour and its products was different in different regions,among which the content in Beijing and Hebei was low,while the content in Henan was high.The reference value of aluminum background content in Tai'an wheat flour and its products was≤16 mg/kg.
