摘　　要：综述了黑木耳和玉木耳膳食纤维提取的多种方法及有关木耳的产品开发现状,以期为木耳的膳食纤维提取及深加工方向提供理论参考。The article reviewed various methods for extracting dietary fiber from Auricularia auricula Underwood and Auricularia auricula var.Li.,as well as the current development status of products related to agaric,in order to provide theoretical reference for the extraction and deep processing of dietary fiber from agaric.
