摘  要:肉及肉制品是人类膳食结构中必不可少的组成部分,因其含有丰富的营养成分,易被食源性致病菌污染,进而对人体健康造成极大的伤害。因此,预防和控制肉及肉制品中食源性致病菌感染对食品安全具有重要意义。为深入了解整个感染过程中食源性致病菌和上皮细胞之间的关系,建立研究食源性致病菌的有效肠道评价模型是控制食源性危害的前提。基于此,本文对肉及肉制品中常见的食源性致病菌感染情况进行总结,并对目前食源性致病菌感染的体内外模型进行讨论。其中,肠道类器官作为评价食源性致病菌感染机制的新模型,在致病机制、细胞和组织趋向性方面具有较大应用潜力。因此,本文重点阐述肠道类器官模型在食源性致病菌感染机制方面的研究现状,并在现有肠道类器官模型特点和问题的基础上对肠道类器官的发展方向提出展望。Meat and meat products are an essential part of the human diet.Being nutritious,they are easily contaminated by foodborne pathogens,which causes serious damage to human health.Therefore,the prevention and control of foodborne pathogen contamination in meat and meat products is of great importance for food safety.In order to deeply understand the relationship between foodborne pathogens and epithelial cells in the whole infection process,it is a prerequisite to establish an effective intestinal evaluation model.Accordingly,this paper summarizes the infection status of common foodborne pathogens in meat and meat products,and discusses the in vivo and in vitro models currently used to assess the infection of foodborne pathogens.Among them,intestinal organoids,a new model to evaluate the infection mechanism of foodborne pathogens,have great potential in the research of the pathogenic mechanism,cell and tissue tropism.Therefore,this paper focuses on the current status of the application of intestinal organoid models in research on the infection mechanism of foodborne pathogens,and discusses the characteristics and problems of the current intestinal organoid models as well as future development directions.
