不同体积不同形状酒杯对白酒感官品评的影响

摘  要:酒杯的形状和体积会影响人们的饮用体验。目前在白酒行业缺乏经过科学论证的饮用杯,消费者对于白酒饮用杯的选择也较为随意。按照相同形状不同体积,相同体积不同形状以及相同形状不同装液量对白酒杯分组并进行感官品评。结果表明,酒杯形状相同时,香气强度会随酒杯容积的升高而升高;酒杯容积一定时,郁金香杯的香气强度,愉悦度和甜感均为最高。50 mL郁金香杯为最佳饮酒杯,并且在装液量为容积三分之一时香气强度最高,给人带来最佳感官体验。这对于国人饮酒具有重大意义。The shape and volume of the cups will affect people's sensory experience of drinking alcoholic beverages.At present,there is no scientific proof of suitable drinking cup in Baijiu,and consumers are casual about the choice of Baijiu drinking cup.In this paper,according to the same shape and different volume,the same volume and different shapes,and the same shape and different liquid volume,white wine cups were grouped and sensory evaluation was carried out.The results showed that when the shape of the wine glass is the same,the aroma intensity would increase with the increase of the glass volume;When the volume of the glass is constant,the aroma intensity,pleasure,and sweetness of the tulip glass are all the highest.A 50 mL tulip cup is the best drinking cup,and the highest aroma intensity is achieved when the liquid volume is one-third of the volume,providing the best sensory experience.This is of great significance for Chinese people to drink alcohol.
