摘　　要：鱼腥草属于药食同源多年生草本植物,具有良好的保健功效。鱼腥草具有清热解毒功效,在我国西南地区如黔贵川等地深受欢迎。然而鱼腥草不耐贮藏。本文综述了鱼腥草保鲜和加工研究进展,其中保鲜方法包括低温保鲜、可食用膜阻隔保鲜、气调保鲜方法以及化学保鲜方法,本文比较了上述各种方法,并提出现有技术存在的问题,为鱼腥草产业发展提供建议。Houttuynia cordata belongs to herbaceous plants with medicinal and edible origins for many years,and has good health benefits.H.cordata has the effect of clearing heat and detoxifying.In southwestern regions of China,such as Guizhou,and Sichuan,there is a food custom that is highly popular.However,H.cordata is not resistant to storage.This article reviewed the research progress in the preservation and processing of H.cordata.The preservation methods included low temperature preservation,edible film coating preservation,air conditioningpreservation and chemical preservation.The advantages and disadvantages of the mentioned methods were compared,and pointed out the existing technical problems,providing suggestions for the development of the H.cordata industry.
