摘　　要：食药用菌是优质的蛋白质来源,介绍食药用菌蛋白质的提取、含量测定方法,探讨食药用菌蛋白质的氨基酸组成、营养评价及其来源、种类、功能,总结食药用菌蛋白质在医药、食品及生物防治方面的应用,并对食药用菌蛋白质的发展前景进行展望。Edible and medicinal fungi are superior sources of proteins.Edible and medicinal fungal proteins were reviewed in terms of their extraction,determination method,amino acid composition,nutritional evaluation,source,types and functions.Their applications in medicine,food and biological control were also summarized.The future prospects of edible and medicinal fungal proteins were discussed.
