摘 要:食品安全问题是关系到公众健康的重大问题,例如食源性致病微生物污染、毒素产生、抗生素滥用、食品添加剂过度使用、重金属离子污染、农兽药残留和有害物质非法添加等。因此,快速、灵敏、可靠的食品有害物质检测对于食品安全的防控具有极其重大的意义。核酸适体是一种可与靶标高亲和力、高特异性结合的单链核酸,能有效识别食品有害物质,在食品安全检测新技术的开发和应用中发挥着重要作用。文章详细介绍核酸适体以及核酸适体传感器监测机制,并阐述核酸适体在抗生素、农药以及其他物质的检测功能,展望核酸适体传感器的发展,希望为水产食品安全分析和核酸适体研究发展提供一定的参考价值。Food safety is a major issue related to public health,such as food-borne pathogenic microbial contamination,toxin production,antibiotic abuse,overuse of food additives,heavy metal ion contamination,pesticide and veterinary drug residues,and illegal addition of harmful substances.Therefore,rapid,sensitive and reliable detection of harmful substances in food is of great significance for the prevention and control of food safety.Nucleic acid aptamers,a kind of single-stranded nucleic acid that can bind to the target with high affinity and high specificity,can effectively recognize harmful substances in food,and play an important role in the development and application of new food safety detection technologies.The article describes in detail the monitoring mechanism of aptamers and aptamer sensors,and describes the function of aptamers in the detection of antibiotics,pesticide residues and other substances,and looks forward to the development of aptamer sensors in the hope of providing a certain reference value for the analysis of aquatic food safety and the development of aptamer research.
