摘　　要：菠萝加工产生大量废弃物,不仅造成资源浪费,而且降低菠萝产业效能。本文归纳总结了菠萝加工废弃物在常规食品、成分提取、功能性转化及应用、畜禽饲料等领域的研究利用现状。发现大多数利用研究均处于实验阶段,菠萝皮作为廉价饲料是当前主要的处理方式。针对现状提出相应的对策,为菠萝产业挖掘废弃物的利用价值提供参考。A large amount of waste generates in pineapple processing,which cause resource wasting and reduce industrial efficiency.This paper summarized the research and utilization of pineapple processing waste in conventional food,component extraction,functional transformation and applications,livestock and poultry feed,etc.Most utilization researches are just in experimental stage,using pineapple peel as cheap feed is current main handling method.The countermeasures were also proposed based on the present situation,which could provide a reference for pineapple industry to explore the utilizable value of the waste.
