摘　　要：纯粮酿造是中国名优白酒与世界其他著名蒸馏酒最显著的差别,对于酿酒专用粮的研究中国白酒产业也从未停歇,酿酒专用粮的建设取得的丰硕成果也为中国白酒产业提供了最为坚实的支撑。鉴于高粱是中国白酒产业酿造原料绝对的主角,本文以酿酒专用高粱为研究对象,对酿酒专用粮发展的政策性优势、发展现状、面临困境进行了浅析,并基于此提出了后续建设发展的建议,为酿酒专用粮的未来发展提供一定的思路及理论参考。Pure grain brewing is the most significant difference between Chinese Baijiu and other famous distilled spirits in the world.The research on liquor-making grains has never stopped,and the fruitful achievements have provided solid support for Chinese Baijiu industry.This paper takes the liquor-making sorghum as an example,analyzes the policy advantages,development status and difficulties in the development of liquor-making grains.This papers then puts forward some suggestions on the subsequent development of liquor-making grains,and provides some ideas and theoretical reference for the future development of liquor-making grains.
