摘 要:本研究以大黄鱼(Pseudosciaena crocea)鱼片为研究对象,通过共挤复合吹膜工艺制备了一种凹凸棒土(AT)负载大蒜精油(AEO)的双层缓释型活性包装薄膜,以此探究该包装薄膜对(4±1)℃贮存条件下大黄鱼鱼片品质的影响。结果显示,与未添加大蒜精油的对照组相比,添加了大蒜精油的薄膜能降低大黄鱼鱼片贮藏期间的微生物数量、K值、TVB-N和TBA值,且添加AT/精油混合体系的薄膜(PP/LDPE+AT+AEO)所包装的大黄鱼鱼片呈现出最理想的鲜度状态。以菌落总数7 lg CFU/g为水产品微生物限值并结合TVB-N(30 mg/100 g)等指标,与市场对照组(LDPE/LDPE)相比,PP/LDPE+AT+AEO缓释薄膜能够有效延长大黄鱼鱼片货架期3~5 d,同时,与只添加精油的对照组(PP/LDPE+AEO)相比,其能够延长大黄鱼鱼片货架期2 d。综上所述,本研究所制备的PP/LDPE+AT+AEO缓释薄膜对大黄鱼鱼片具有优良的保鲜性能,同时为水产品的冷藏保鲜以及货架期的延长提供了理论指导和方法参考,具有广阔的市场应用前景。This research focused on the preservation effect of slow-release active bilayer films incorporating attapulgite(AT)loaded with Allium sativum essential oil(AEO),produced via a blown film extrusion method for hot processing on large yellow croaker fillets at(4±1)℃.The results showed that the film with AEO was instrumental in reducing microbial biomass,K value,TVB-N,and TBA value throughout the storage period of large yellow croaker fillets,as compared to the control group without AEO.Moreover,the large yellow croaker fillets packaged using the film with AT/AEO mixture(PP/LDPE+AT+AEO)exhibited the most optimal freshness state.In terms of microbiological acceptability limit of 7 lg CFU/g combined with a TVB-N limit of 30 mg/100 g,the experimental group(PP/LDPE+AT+AEO)extended the shelf life by 3-5 and 2 days,respectively,when contrasted with the control groups that contained no active substance(LDPE/LDPE and PP/LDPE)and the control group incorporating only AEO(PP/LDPE+AEO).In summary,the PP/LDPE+AT+AEO slow-release film prepared in this research demonstrated superior preservative properties for large yellow croaker fillets.It provides theoretical guidance and methodological references for the preservation and extension of the shelf life of aquatic products under refrigerated conditions and holds promise for broad market application prospects.
