食用盐碘含量检测方法的适用性探讨

摘  要:文章叙述了食用盐碘含量检测方法及检测存在的问题,重点通过实验测试直接滴定法、氧化还原滴定法、电感耦合等离子体质谱法(ICP-MS)的适用性。其中,未添加氨基酸类物质或还原类物质的食用盐采用3种方法均可准确测得碘含量,添加氨基酸类物质或还原类物质的食用盐采用ICP-MS法可准确测得碘含量,采用直接滴定法或氧化还原滴定法测得的碘含量与实际量存在较大偏差。文章验证了食用盐碘含量检测方法的适用性,既便于制盐企业在生产过程中进行质量控制,又能够在流通环节监督各种食用盐的碘含量,同时希望能为后期各种食用盐开发过程中碘含量检测方法的选择提供依据。This article described the methods and problems of iodine content detection in ed-ible salt.The applicability of direct titration,REDOX titration and inductively coupled plasma mass spectrometry(ICP-MS)was tested experimentally.The iodine content of edible salt without adding amino acids or reducing substances can be accurately measured by the three methods,and the iodine content of edible salt with adding amino acids or reducing substances can be accurately measured by ICP-MS method,and the iodine content measured by direct titration or REDOX titra-tion method is significantly different from the actual amount.This article verified the applicability of the iodine content detection method for edible salt,which not only facilitates the quality control in the production process of salt enterprises,but also can supervise the iodine content of various ed-ible salt in the circulation link,and hopes to provide a basis for the selection of iodine content de-tection methods in the later development of various edible salt.
