摘  要:肉类和其他动物来源蛋白质一直被视为运动员和健身人群饮食中不可或缺的组成部分。近年来,植物蛋白因其对环境和健康的积极作用越来越受到欢迎。但相较于动物蛋白,我国对植物蛋白应用仍处于初步阶段,植物蛋白的补充对人体运动能力影响的相关研究也相对较少。该文简述了植物蛋白的营养特点,探讨了阻力、耐力训练中补充植物蛋白质对肌肉力量及质量、瘦体重、运动表现以及肌肉损伤和恢复等方面的作用,指出了植物蛋白改善运动能力的有效剂量和其他影响因素,以期为植物蛋白在运动领域的研究、开发和应用提供依据。Meat and other animal-derived proteins have long been seen as an integral part of the diet of athletes and fitness enthusiasts.In recent years,plant proteins have become increasingly popular due to their positive effects on the environment and health.However,compared with animal protein,the application of plant protein in China is still in the preliminary stage,and there are also relatively few relevant studies on the effects of plant protein supplementation on human exercise ability.In this paper,the nutritional characteristics of plant protein were summarized,the effects of adding plant protein in resistance exercise and endurance exercise on muscle strength,muscle mass,lean body weight,exercise performance,muscle damage and recovery were discussed,the effective doses and other factors of plant protein to improve exercise performance were pointed out.It is hoped that this will provide a basis for the research,development and application of plant protein in the field of sports.
