摘  要:近年来,我国乳制品销售量稳步上升,国内奶类产量快速增长,但生乳仍供应不足,复原乳依然存在。严格复原乳监管,对提高我国乳及乳制品的品质有重要意义。文章主要介绍了国内外复原乳的重要检测技术,包括色谱法(高效液相色谱法、超高效液相色谱法)、液相色谱质谱联用、光谱法(近红外光谱法、荧光光谱法、紫外分光光度法)及其他检测方法的研究进展,并讨论了各类方法的基本原理、优缺点、检出限,以期为复原乳检测方法的选择提供参考。In recent years,the sales of dairy products in China has steadily increased,and domestic milk production has grown rapidly,but raw milk is still in short supply,and reconstituted milk still exists.Strict regulation of reconstituted milk is important to improve the quality of milk and dairy products in China.This review summarized the important detection methods of reconstituted milk,mainly include the following parts:chromatography,liquid chromagraphy-mass spectrometry,spectroscopy and other detection methods,and discussd the basic principles,advantages and disadvantages of these methods,limit of detection,in order to provide a reference for the selection of detection methods for reconsituted milk.
