摘  要:研究发现杏仁副产品中蛋白质含量极为丰富,功能活性物质种类齐全,其中也包括ACE抑制肽。介绍了杏仁的营养成分,ACE抑制肽的降血压机理,阐述了杏仁ACE抑制肽制备方法与分离纯化方法,介绍了几种杏仁ACE抑制肽的结构鉴定方法和构效关系研究、分析检测方法,并对以后杏仁ACE抑制肽的研究给出展望。China is a major producer of almonds,generating a significant amount of almond by-products annually.These by-products are known to be high in protein content and contain a wide range of functional active compounds,including ACE inhibitory peptides.This study presents the nutritional composition of almonds,the mechanism through which ACE inhibitory peptides lower blood pressure,details the preparation and isolation methods of almond ACE inhibitory peptides,discusses the structural identification and conformational relationships of several almond ACE inhibitory peptides,outlines analytical and detection methods,and offers insights for future research on almond ACE inhibitory peptides to guide further studies.
