摘  要:本研究以玉米醇溶蛋白和海藻酸钠为原料,通过反溶剂法制备了负载木犀草素的复合颗粒溶液,并评价其对圣女果的保鲜效果。结果表明,当木犀草素与zein比例为1∶50时,颗粒的得率为78.19%,对木犀草素的包埋率为73.87%。体外抗氧化活性结果表明,与游离木犀草素相比,颗粒包埋可以提高木犀草素的抗氧化活性。对圣女果的保鲜效果结果表明,与游离木犀草素相比,包埋能够减少圣女果的水分含量损失,提高圣女果维生素C的含量,减缓圣女果硬度的损失,说明颗粒包埋有利于提高木犀草素的保鲜效果。本研究为果蔬保鲜提供了一条新途径,为生物活性的研究提供新的理论依据。In this study,zein and sodium alginate were used as raw materials to prepare luteolin loaded composite particle solution by antisolvent method,and its fresh-keeping effect on cherry tomatoes was evaluated.The results showed that when the ratio of luteolin to zein was 1∶50,the particle yield was 78.19%and the embedding rate was 73.87%.The results of antioxidant activity in vitro showed that compared with free luteolin,particle embedding could improve the antioxidant activity of luteolin.The results showed that compared with free luteolin,embedding could reduce the loss of water content,increase the content of vitamin C in tomato and slow down the loss of tomato hardness,indicating that particle embedding was beneficial to improve the preservation effect of luteolin.This study provides a new way for fruit and vegetable preservation and a new theoretical basis for the study of biological activity.
