摘 要:富马酸二甲酯因其防霉、保鲜效果好,在食品中被广泛应用。然而,富马酸二甲酯食用过多,会导致健康损害,已被列入我国第二批食品中可能违法添加的非食用物质名单。因富马酸二甲酯价格便宜,仍屡次被使用,并引发一系列食品安全问题,随着人们对食品安全和健康的关注不断增加,富马酸二甲酯引起了公众的关注,检测食品中富马酸二甲酯含量变得至关重要。本文主要对食品中富马酸二甲酯的提取方法和仪器检测方法研究现状进行阐述,为建立快速测定食品中富马酸二甲酯方法提供理论参考。Dimethyl fumarate is widely used in food due to its effective mold prevention and preservation properties.However,excessive consumption of dimethyl fumarate could lead to health hazards and it has been included in the list of non-edible substances that may be illegally added to food in China.Despite its cheap price,dimethyl fumarate continues to be used,resulting in a series of food safety issues.With increasing concerns about food safety and health,dimethyl fumarate has drawn public attention,making the detection of its content in food critically important.The current research status of extraction methods and instrumental detection methods for dimethyl fumarate in food was was primarily discussed,providing a theoretical reference for the establishment of rapid determination methods in food.
