摘  要:由于宣称巴蜀麻辣火锅发源地的各方均没有充分的证据支持,导致目前对何处是巴蜀麻辣火锅发源地仍处于一种不确定的推测状态。巴蜀麻辣火锅是随川江航运的兴起,由船工的野外饮食方式发展而来。依据辣椒、豆瓣酱在巴蜀民众生活中的广泛应用时间推测,巴蜀麻辣火锅大致起源于清朝嘉庆至道光年间。道光年间,麻辣火锅的饮食雏形已在长江岸边滩涂出现。小米滩,是1 000余公里川江中唯一有确切地名的关于巴蜀麻辣火锅发源传说的长江滩涂,也最有可能是巴蜀麻辣火锅发源地。Due to the lack of sufficient evidence supporting the claims about the birthplace of Bashu HotPot,the birthplace of Bashu HotPot remains uncertain.The cognitive consensus on the origin of Bashu HotPot is that it was evolved from the outdoor dining habits of boatmen with the rise of navigation on the Yangtze River.Combining the widespread use of chili peppers and doubanjiang(broad bean paste)in the daily lives of the Bashu people,it’s believed that Bashu HotPot originated roughly during the Jiaqing to Daoguang periods of the Qing Dynasty.During the Daoguang period,the prototype form of spicy hotpot had already appeared on the beach along the Yangtze River.Along more than 1000-kilometer-long Chuanjiang River,Xiaomitan is the only mudflat with a definite name and the legend of the origin of Bashu HotPot,and is also the most likely birthplace of Bashu HotPot.
