基于气候相似性分析白酒最佳酿造地区研究——以白云边酒业为例

摘　　要：湖北白云边酒是浓酱兼香型酒的典型代表,独特的气候条件决定了白云边酒“芳香优雅、酱浓协调、绵厚甜爽、圆润怡长”的风味特征。针对白酒最佳酿造地气候区划研究空白这一现实,本研究通过对比白云边酒酿造地不同酿酒轮次时段内与洪湖、秭归气候条件的差异,得到了酒酿造地独特的气候特征,提出了计算气候相似度的改进马氏距离法(添加了时段权重系数和因子权重系数),根据白云边酿酒轮次时段、轮次酒品质和白云边酒酿造地独特气候特征,分别对时段权重系数和因子权重系数进行赋值,得出了全国各地与白云边酒酿造地气候相似性空间分布,结合专家建议的阈值,首次对白云边酿造地进行了气候相似性区划,得到面积约972.4km^(2)的高度气候相似区,为白云边酒业的发展提供了数据支持。Hubei Baiyunbian Liquor is a typical representative of Nongjiangjianxiang Baijiu.The unique climatic conditions determine the unique flavor characteristics of Baiyunbian Liquor.Aiming at the reality that there is no research on climate regionalization of the best production region of Baijiu,this paper compares the climatic conditions of the production region of Baiyunbian Liquor(Songzi)with Honghu and Zigui,analyzes the unique climatic characteristics of the production region of Baiyunbian Liquor,and proposes an improved Mahalanobis distance method to calculate the climate similarity.The period weight coefficient and factor weight coefficient are assigned according to the production rounds of Baiyunbian Liquor,the liquor quality of each round,and the unique climatic characteristics of the production region of Baiyunbian Liquor.The spatial distribution of climate similarity between the production region of Baiyunbian Liquor and all other places is obtained.Combined with the threshold suggested by experts,the climate similarity division is carried out for the production region of Baiyunbian Liquor,and the area of the places with highly similar climate is about 972.4 km^(2).This study has provided data support for the development of Baiyunbian Distillery.
