摘　　要：一方水土养一方人,一方人有一方人的美食。胶东半岛三面临海,海产丰,海味多。海味虽众,但一方人对海味的青睐各有不同。海阳有“无鲞(鱼)不成席”之说,可见鲞鱼在海阳人心中的位置。莱州有“没吃针良鱼,不算过‘鱼市’”之说,可见莱州人对针良鱼的情有独钟。在我居住的烟台,人们对一种鱼格外垂青,它就是鲐鱼,学名鲐鲅鱼。鲐鱼和鲅鱼都是烟台人常见的鱼,二者同属硬骨鱼纲、鲈形目,算是亲戚。Clean the fresh mackerel thoroughly and wash up the pakchoi after removing the roots and old leaves.The remaining steps are similar to the cooking method of other types of fish.Heat the pot before putting oil;stirfry the scallions,ginger,and garlic until they smell fragrant;then put the clean bakchoi into the pot and stirfry until it is softened get it out and set aside for later use.
