摘　　要：为了分析湖南壶天石羊的肌肉营养成分,并比较分析壶天石羊在不同年龄阶段(6,12,24月龄)的肌肉差异特征,试验选择纯种的24月龄壶天石羊母羊12只、12月龄壶天石羊母羊6只,屠宰后取背最长肌测定常规营养成分及矿物质、氨基酸、脂肪酸含量,并与已报道的6月龄壶天石羊背最长肌相应指标数据进行比较分析。结果表明:24月龄壶天石羊与12月龄壶天石羊相比,水分、粗蛋白、粗脂肪、粗灰分和干物质均差异不显著(P>0.05);与6月龄壶天石羊相比,24月龄壶天石羊背最长肌中粗脂肪含量升高,粗蛋白含量降低。与12月龄壶天石羊相比,24月龄壶天石羊背最长肌中镁含量极显著升高(P<0.01),锌含量也明显增加(P=0.06);24月龄壶天石羊锌含量明显高于6月龄壶天石羊,增加量超过120%;24月龄壶天石羊的铜残留量(1.46μg/g)高于6月龄壶天石羊,高出71.76%,铅、锰残留量则非常低。与12月龄壶天石羊相比,24月龄壶天石羊背最长肌中天冬氨酸、谷氨酸、丝氨酸、甘氨酸、苏氨酸、精氨酸、赖氨酸、亮氨酸、丙氨酸、酪氨酸、缬氨酸、异亮氨酸、半胱氨酸、甲硫氨酸含量均增加;24月龄壶天石羊背最长肌中天冬氨酸、苏氨酸、赖氨酸、亮氨酸、丙氨酸、缬氨酸、异亮氨酸含量相比于6月龄增幅均超过30.00%。24月龄壶天石羊背最长肌中必需氨基酸和呈味氨基酸含量分别为9.02%、16.24%,均高于6,12月龄壶天石羊。与6月龄壶天石羊相比,24月龄壶天石羊肌肉中含有较多的天冬氨酸、必需氨基酸、呈味氨基酸、十七碳酸、十七烷酸和花生一烯酸,而含有较低的硬脂酸、花生四烯酸、α-亚麻酸和亚油酸。说明壶天石羊在不同年龄段的氨基酸成分和肌内脂肪含量等营养成分具有明显差异,并具有优良肉质特性。To analyze the muscle nutrient composition of Hunan Hutianshi goats,and to compare the muscle difference characteristics of Hutian-shi goats at different ages(6,12,24 months),a total of 1224-month-old and 612-month-old purebred Hutianshi ewes were selected.After slaughter,the longissimus dorsi muscle was collected to measure the routine nutrient composition,mineral element content,amino acid content and fatty acid content,and the corresponding index data of longissimus dorsi muscle were compared with those of the same 6-month-old Hutianshi goats.The results showed that there were no significant differences in water content,crude protein,crude fat,crude ash and dry matter between 24-month-old and 12-month-old Hutianshi goats(P>0.05).Compared with 6-month-old Hutianshi goats,the crude fat content of longissimus dorsi muscle in 24-month-old Hutianshi goats was increased,while the crude protein content was decreased.Compared with 12-month-old Hutianshi goats,24 months old Hutianshi goats had higher content of magnesium(P<0.01)and zinc(P=0.06)in longissimus dorsi muscle.Zinc content in 24-month-old Hutianshi goats was significantly higher than that in 6-month-old Hutianshi goats,which increased by more than 120%.The copper residue of 24-month-old Hutianshi goats(1.46μg/g)was higher than that of 6-month-old Hutianshi goats,which increased by 71.76%,but the lead and manganese residues were very low.Compared with 12-month-old Hutianshi goats,the contents of 14 amino acids including aspartic acid,glutamic acid,serine,glycine,threonine,arginine,lysine,leucine,alanine,tyrosine,valine,isoleucine,cysteine,and methionine in longissimus dorsi muscle of 24-month-old Hutianshi goats were increased.Compared with 6-month-old Hutianshi goats,the contents of aspartic acid,threonine,lysine,leucine,alanine,valine and isoleucine in the longissimus dorsi muscle of 24-month-old Hutianshi goats increased by more than 30.00%.The contents of essential amino acids and flavor amino acids in the longissimus dorsi muscle of 24-month-old Hutians
