摘 要:为探究富硒技术对提高黄瓜(Cucumis sativus L.)品质和健康价值的作用,以不增施硒肥为对照,采用大田试验研究外源硒不同添加方式和添加量对黄瓜果实硒含量、光合作用、抗氧化系统参数和营养品质的影响。结果表明,与对照相比,施用外源硒可促进黄瓜植株生长,提高叶片叶绿素相对含量值(SPAD)和净光合速率;施硒处理黄瓜果实超氧化物歧化酶(SOD)、过氧化物酶(POD)和过氧化氢酶(CAT)活性分别增加11.61%~57.66%、3.02%~32.02%和16.11%~60.01%,而丙二醛(MDA)含量则下降。添加外源硒较对照提高了黄瓜果实硒含量及营养品质,表现为黄瓜果实可溶性糖、可溶性蛋白、维生素C含量及矿质营养元素钾、铁、锌等含量的增加。其中,花期开始连续3次喷施硒肥处理黄瓜果实富硒效果最为明显。综上,添加外源硒有利于促进黄瓜果实富硒并改善其营养品质,提高抗氧化酶活性。本研究结果可为指导黄瓜富硒生产提供依据。To investigate the effect of selenium enrichment technology on improving the quality and health value of cucumber(Cucumis sativus L.),field experiments were conducted to investigate the effects of different selenium application methods and levels on selenium content,photosynthesis,antioxidant system parameters,and nutritional quality of cucumber fruits,with no increase in selenium fertilizer application as a control.The results showed that compared to the control,the application of exogenous selenium promoted cucumber plant growth,increased the relative chlorophyll content(SPAD),and enhanced net photosynthetic rate of the leaves.Selenium application increased the activities of superoxide dismutase(SOD),peroxidase(POD),and catalase(CAT)in cucumber fruits,which were increased by 11.61%to 57.66%,3.02% to 32.02%,and 16.11%to 60.01%,respectively,while the content of malondialdehyde(MDA)was decreased.The addition of exogenous selenium increased the selenium content in cucumber fruits and improved their nutritional quality(soluble sugar,soluble protein,vitamin C content,as well as the content of mineral nutrients such as potassium,iron,and zinc were increased).Among the different application methods,three consecutive selenium foliar sprayings starting at the flowering stage showed the most pronounced effect on selenium enrichment in cucumber fruits.In conclusion,the addition of exogenous selenium promotes selenium enrichment,improves nutritional quality,and enhances antioxidant enzyme activity of cucumber.The results of this study can provide a basis for guiding the production of selenium-rich cucumber.
