摘 要:建立通过高效液相色谱法检测酱卤肉中11种磺酸基团着色剂的方法。样品经提取剂(无水乙醇∶乙腈∶氨水∶水体积比50∶20∶20∶10)提取,调节上样溶液pH 2沉淀蛋白质后,过混合弱阴离子固相萃取柱净化。采用20 mmol/L乙酸铵(A)-甲醇(B)作为流动相进行梯度洗脱,采用光电二级阵列管检测器(PDA)对11种磺酸基团着色剂进行多波长检测。结果表明:方法的回收率为60.8%~96.2%,相对标准偏差均小于15%(n=6),检出限均可达到0.5 mg/kg。建立的方法可对11种磺酸基团着色剂进行同时检测。A method for determination 11 kinds of sulfonic acid group colorants in sauced meat was established by high performance liquid chromatography.The sample was extracted by extraction agent(anhydrous ethanol∶acetonitrile∶ammonia∶water volume ratio 50∶20∶10∶10),and the protein was precipitated by adjusting the pH of the sample solution to 2.The mixture was purified by a weak anion solidphase extraction column.20 mmol/L ammonium acetate(A)-methanol(B)was used as mobile phases for gradient elution,and a photoelectric secondary array tube detector(PDA)was used for multi wavelength detection of 11 kinds of sulfonic acid group colorants.The results showed that the recovery rate of the method was 60.8%-96.2%,the relative standard deviation was less than 15%(n=6),and the detection limits could reach 0.5 mg/kg.The method established could be used for simultaneous detection of 11 kinds of sulfonic acid group colorants.
