摘  要:核桃富含多种营养和活性成分,不仅可提供大量的人体必需营养,且具有预防心脑血管疾病、延缓衰老、抗氧化等功效,可加工成多种产品。综述国内外核桃的营养和活性成分,果仁加工及其皮渣综合利用研究进展,详细介绍核桃果仁、青皮、核桃硬壳、分心木综合加工利用,展望核桃的综合加工利用前景,为核桃的精深加工利用提供理论依据。Walnut is rich in a variety of nutrients and active ingredients,which can not only provide a large number of essential nutrients for human body,but also have the effects of preventing cardiovascular and cerebrovascular diseases,delaying aging,anti-hypoxia,etc.Walnut can be processed into a variety of products.This paper reviewed the research progress of walnut nutrition and active ingredients,kernel processing and comprehensive utilization of peel residue at home and abroad.The processing of walnut kernel,walnut skin,walnut shell and wood into a variety of products was introduced in detail,and the prospects of comprehensive processing and utilization of walnut were prospected,all of which provided theoretical basis for the deep processing and utilization of walnut.
