摘　　要：超高压加工技术(High Pressure Processing,简称HPP)作为一种现代高新技术在食品工业中非常重要,具有广阔的应用前景。本文主要介绍了超高压技术的概念、作用原理、国内外现状及存在的问题,同时介绍了超高压在其他领域的应用。High Pressure Processing(HPP),as a kind of modern High-tech,is very important in food industry and has a broad application prospect.This paper mainly introduces the concept,function principle,present situation and existing problems of ultra-high pressure technology at home and abroad,and introduces the application of ultra-high pressure in other fields.
