摘  要:目的赭曲霉毒素A(ochratoxin A,OTA)是谷物等食物中常见的真菌毒素,可对人体健康产生多种不良作用。本文基于OTA毒性效应进行健康危害评估,旨在确定其安全的暴露水平,为食品安全暴露风险评估提供科学依据。方法本文基于系统性文献检索,对OTA进行危害识别和危害特征描述,依据现有毒理学数据确定其安全的暴露水平。结果OTA具有肝肾毒性、遗传毒性、生殖发育毒性和致癌性等多种毒性效应,以暴露边界值(margin of exposure,MOE)法进行OTA毒性的危害特征描述,以定性反映人群暴露的健康危害。结论表征非肿瘤效应时,OTA的MOE取值为200;表征肿瘤效应时,MOE取值为10000。该研究结果可为今后OTA的食品安全风险评估提供参考。Objective Ochratoxin A(OTA)is a common fungal toxin found in grains and other foods,which can cause various hazards to health.To determine its safe exposure levels and provide a basis for food safety exposure risk assessment,the toxic effects and health hazards of OTA are assessed in this article.Methods Based on systematic literature search,the hazard identification and characteristics of OTA were carried out.And the safe exposure levels of OTA were determined based on existing toxicological data.Results OTA had a variety of toxic effects such as hepatorenal toxicity,genotoxicity,reproductive development toxicity and carcinogenicity.The margin of exposure(MOE)method was recommended to be used as the hazard characteristics of OTA for qualitatively reflecting the health risks exposed to the population.Conclusion The suggested MOE is 200 or 10000 when characterizing the non-tumor and tumor effects,respectively.The MOE of OTA determined in this article can provide a reference for subsequent food safety risk assessment.
