摘 要:目的:调查2023年常德市本地产鲜湿米粉中铅、镉、总铬、总砷和总汞5种重金属元素污染状况,并评估其膳食暴露的健康风险。方法:随机采集常德市各区县市本地产鲜湿米粉共92份,按照国标方法测定5种重金属元素含量,采用点评估方法对米粉中5种重金属元素的膳食暴露风险进行评估。结果:92份样品中5种重金属元素的检出率为30.4%~100.0%,含量均低于标准限量值;米粉中重金属综合污染指数平均值为0.149,属于安全级别,总目标风险系数为0.691,总体处于安全范围。结论:2023年常德市鲜湿米粉中铅、镉、总铬、总砷和总汞5种重金属元素总体污染程度较轻,对消费人群健康影响有限。Objective:To investigate five heavy metals in fresh wet rice noodles produced in Changde in 2023,and assess the health risks of dietary exposure.Method:A total of 92 samples of fresh wet rice noodles were randomly collected from different counties in Changde,the contents of five heavy metals in them were determined according to the national standard method,and the dietary exposure of 5 heavy metals from fresh wet rice noodles was evaluated by the method of point estimation.Result:The detection rates of 5 heavy metals in 92 samples ranged from 30.4%to 100.0%,and the contents were all lower than the standard limit value;the average comprehensive pollution index of heavy metals in rice flour was 0.149,which belongs to the safe state,and the comprehensive health hazard index was 0.691,which was generally at the safe level.Conclusion:The overall pollution degree of five heavy metals in fresh wet rice noodles in Changde in 2023 was relatively light,with limited impact on the health of consumers.
