摘 要:本文用电感耦合等离子体质谱法和液相色谱-原子荧光光谱法分别测定干香菇及对应的培养基中总砷和无机砷[As(Ⅲ)、As(Ⅴ)两种不同形态的砷]的含量。结果表明,干香菇中总砷含量为0.22~1.02 mg·kg^(-1),无机砷含量为0.11~0.44 mg·kg^(-1),其对应培养基中总砷含量为0.30~0.98 mg·kg^(-1),无机砷含量为0.18~0.58 mg·kg^(-1)。对比发现,干香菇中无机砷含量较高的,总砷含量也较高,其对应的培养基中无机砷和总砷的含量也较高。香菇中无机砷与总砷之间存在一定的正相关关系。所选闽东古田地区干香菇中无机砷的含量较低,符合食品安全国家标准要求,食用安全性较高。The contents of total arsenic and inorganic arsenic in dried Lentinula edodes and corresponding medium were determined by inductively coupled plasma mass spectrometry and liquid chromatography-atomic fluorescence spectrometry.The results showed that the total arsenic content in dried Lentinula edodes was 0.22~1.02 mg·kg^(-1),the inorganic arsenic content was 0.11~0.44 mg·kg^(-1),and the total arsenic content in corresponding medium was 0.30~0.98 mg·kg^(-1),and the inorganic arsenic content was 0.18~0.58 mg·kg^(-1).It was found that the content of inorganic arsenic in dried Lentinula edodes was higher,the content of total arsenic was higher,and the content of inorganic arsenic and total arsenic in the corresponding medium was also higher.There was a positive correlation between inorganic arsenic and total arsenic in Lentinula edodes.The content of inorganic arsenic in dried Lentinula edodes in Gutian area of east Fujian province is low,which meets the requirements of national food safety standards and has high edible safety.
