摘 要:为了解广东省湛江市市售对虾中汞污染的情况,本文以5个不同品种的市售对虾为研究对象,采用微波消解-电感耦合等离子体质谱法分析各品种对虾的虾头、虾肉、虾壳中的总汞含量变化,并结合单因子指数评价法对虾肉中的汞污染情况进行评价。结果表明,5种对虾的虾头中总汞含量最高,其次为虾肉和虾壳;宽沟对虾和中国对虾较日本对虾、南美白对虾和刀额新对虾更易发生汞污染;虾肉的污染指数均小于0.2,表明汞污染程度低,消费者可安全食用。In order to understand the mercury pollution in prawn sold in Zhanjiang city,Guangdong province,the total mercury content in the head,meat and shell of prawn sold in 5 different varieties of prawn was determined by microwave digestion-inductively coupled plasma mass spectrometry,and the mercury pollution in prawn meat was evaluated by single factor index evaluation method.The results showed that the total mercury content in the head of 5 kinds of prawn was the highest,followed by the meat and shell of prawn.Penaeus latisulcatus and Fenneropenaeus chinensis were more likely to be contaminated with mercury than Penaeus japonicus,Litopenaeus vannamei and Metapenaeus ensis.The pollution index of shrimp meat were all less than 0.2,indicating that the mercury pollution was low and consumers could eat it safely.
