摘 要:为明确高温大曲中嗜热真菌的种类,更好地了解高温大曲嗜热真菌,以贵州、湖北、江苏等地不同酒企的高温大曲为原料,采用传统稀释涂布平板法分离纯化嗜热真菌,结合形态学与现代分子生物学方法鉴定出嗜热真菌。最终共分离鉴定4个不同种属的嗜热真菌,共计16株嗜热真菌,分别为7株嗜热子囊菌(Thermoascus crustaceus)、4株微小根毛霉(Rhizomucor pusillus)、2株小孢根霉(Rhizopus microsporus)、3株疏棉状嗜热丝孢菌(Thermomyces lanuginosus)。为进一步探究高温大曲中嗜热真菌的性能及其对高温大曲中发挥的作用提供材料准备。In order to clarify the species of thermophilic fungi in high-temperature barley and better understand the thermophilic fungi of high-temperature barley,this paper used high-temperature barley from different wine enterprises in Guizhou,Hubei and Jiangsu regions as raw materials to isolate and purify the thermophilic fungi by the traditional dilution coating plate method,combined with morphology and modern molecular biology methods to identify the thermophilic fungi.A total of 16 strains of thermophilic fungi from four different genera were isolated and identified,including seven strains of Thermoascus crustaceus,four strains of Rhizomucor pusillus,two strains of Rhizopus microsporus,three strains of Thermomyces lanuginosus,and three strains of Thermomyces lanuginosus.This provided material for further investigation of the properties of thermophilic fungi and their role in high-temperature macerations.
