摘　　要：目的综述功能化多糖基薄膜的设计与实现方面的文献,为提高可生物降解包装膜的功能性与稳定性,以及拓展它在各类食品包装中的应用提供参考。方法系统梳理天然多糖基薄膜在抗菌、抗氧化等活性包装,以及pH响应、温度监测等智能包装方面的功能性设计。阐述活性包装膜中活性物质的控释技术,并探讨多糖基活性包装和智能包装应用于食品保鲜面临的机遇与挑战。结论采用多糖基活性包装和智能包装薄膜,不仅能够延长食品的保质期,还可以监测食品的品质和新鲜程度。开发绿色、安全、功能性的多糖基食品包装薄膜及其在食品保鲜中的应用具有重要的意义和实用价值。The work aims to review the design and realization of functionalized polysaccharide-based films to provide reference for improving the function and stability of biodegradable packaging films and expanding its application in various food packaging.The functional design of natural polysaccharide-based films in antibacterial,antioxidant and other active packaging and pH response,temperature monitoring and other intelligent packaging was systematically sorted out.The controlled release technology of active substances in the active packaging films was described and the opportunities and challenges faced by the application of polysaccharide-based active packaging and intelligent packaging films in food preservation were discussed.The polysaccharide-based active packaging and intelligent packaging films can not only extend the shelf life of food,but also monitor the quality and freshness of food.Therefore,it is of great significance and practical value to develop green,safe and functional polysaccharide-based food packaging films and its application in food preservation.
