摘  要:嗜冷菌分泌的耐热蛋白酶能够降低乳制品品质而受到广泛关注。嗜冷菌分泌的蛋白酶具有耐热性,能够在超高温瞬时灭菌处理后仍保持部分活性。原料乳中常见的外源耐热蛋白酶是假单胞菌分泌的胞外蛋白酶AprX,全面了解蛋白酶AprX的生物学特性、蛋白水解潜力和调控途径,有助于寻找抑制嗜冷菌蛋白酶的方法。本文概述蛋白酶AprX的最新研究进展和控制手段,为蛋白酶AprX的控制提供新思路。Heat-resistant protease secreted by psychrophilic bacteria can reduce the quality of dairy products and has attracted extensive attention.The protease secreted by psychrophiles is heat resistant and can even retain partial activity after UHT treatment.The common exogenous thermostable protease in raw milk is the extracellular protease AprX secreted by Pseudomonas,so a comprehensive understanding of the biological properties,proteolytic potential and regulation of the protease AprX will help to find ways to control psychrophilic protease.In this paper,the latest research progress and control methods of protease AprX are reviewed,and new ideas for the control of protease AprX are provided.
