摘  要:本研究对营口市650个居民样本进行虾蛄膳食习惯调查,当镉含量以现行限量标准《食品安全国家标准食品中污染物限量》(GB 2762—2022)中3.0 mg·kg^(-1)计时,运用靶标危害系数法对营口市虾蛄中的镉进行膳食暴露风险评估。结果表明,虾蛄中镉的膳食暴露风险受年龄、性别、虾蛄公母、食用时是否去肠腺等因素影响,但靶标危害系数均小于1,不存在潜在健康风险。In this study,dietary habits of 650 resident samples in Yingkou were investigated,when the cadmium content was measured at 3.0 mg·kg^(-1) in the current limit standard GB 2762—2022,the dietary exposure risk of cadmium in Yingkou mantis shrimp was assessed by the target hazard coefficient method.The results showed that the dietary exposure risk of cadmium in mantis shrimp was affected by age,sex,male and female,and whether intestinal gland was removed during consumption.However,the target risk coefficient was all less than 1,indicating that there was no potential health risk.
