摘 要:生物胺主要由微生物氨基酸脱羧酶作用于氨基酸脱羧而生成,广泛存在于食品中。生物胺摄入过量可能会引起直接或间接的毒性作用,因此开展食品中生物胺的快速筛查至关重要。表面增强拉曼散射(Surface-Enhanced Raman Scattering,SERS)技术作为一种高灵敏、无损检测、快速响应的光谱分析技术,在食品生物胺快速、高灵敏检测中得到了广泛的应用。本文简述了SERS的原理和机制,概述了SERS不同的检测模式以及相应的增敏基底构建,总结了近年来SERS传感技术在食品生物胺检测中的应用,提出了SERS技术在食品生物胺快速检测中存在的问题和不足,并对未来的研究发展方向和应用前景进行了展望。Bioamines are mainly produced by the reaction of microbial amino acid decarboxylase on amino acid decarboxylation and are widely found in foods.Excessive intake of bioamines may cause direct or indirect toxic effects,so rapid detection of bioamines in food is essential.Surface-enhanced Raman scattering(SERS) technology,as a highly sensitive,non-destructive detection and fast response spectral analysis technology,has been widely used in the rapid and sensitive detection of bioamines.Herein,the principle and mechanism of SERS,different SERS detection modes and corresponding sensitized base were summarized.The application of SERS technology for bioamines detection was summarized.The existing problems and shortcomings of SERS technology were pointed out,and the future research development direction were prospected.
