摘 要:小米谷糠是谷子精加工过程中产生的混合副产物,富含多种营养成分和活性物质,如多酚、多糖、粗纤维、脂肪、蛋白质等。该资源多被用作动物饲料喂养畜禽或作为肥料覆盖农田,导致了该副产物的浪费。目前,对小米谷糠中水溶性多糖的研究尚处于起步阶段。因此,该文总结了小米谷糠中水溶性多糖的主要提取技术(热水浸提法、酶解提取法、超声波提取法等)及其保健功能(降血糖、免疫调节、抗氧化等)的最新研究进展,旨在提高小米谷糠资源的利用率和附加值,也为相关功能性产品的开发提供一定参考。Millet bran is a mixed byproduct produced during the refined processing of millet,which is rich in various nutrients and active substances,such as polyphenols,polysaccharides,dietary fiber,lipids,proteins,etc.This resource is often used as animal feed to feed livestock or as fertilizer to cover farmland,resulting in the waste of this byproduct.At present,the research on water-soluble polysaccharides in millet bran is still in its infancy.Therefore,this article summarized the latest research progress on the main extraction techniques of water-soluble polysaccharides from millet bran(such as hot water extraction,enzymatic extraction,ultrasonic extraction,etc.)and their health functions(such as hypoglycemic,immune regulation,antioxidant,etc.),aiming to improve the utilization rate and added value of millet bran resources,and also provide some reference for the development of related functional products.
