摘  要:以黑小麦、苦荞、燕麦、青稞、黄豆、黑芝麻、核桃和桑葚为主要原材料,制备了一种膳食纤维冲调粉。试验首先对膳食纤维冲调粉的辅料用量进行优化,然后对其营养成分和活性成分进行分析,最后研究了其在肠胃消化作用下自由基清除率的变化。试验结果表明,聚葡萄糖添加量为2.5%,单甘酯添加量为0.25%,麦芽糖醇添加量为10%时,膳食纤维冲调粉冲调状况和口感均表现良好,平均综合评分达到了77分。最优配比制备的膳食纤维冲调粉蛋白质含量约为22%,膳食纤维总量约为21%,脂肪总量约为8.5%,同时还含有芦丁、槲皮素、黄酮、多酚等生物活性成分,具备丰富的营养和功能性。经过肠胃消化作用后,自由基清除率得到有效提高。With Triticale,tartary buckwheat,oats,highland barley,soybeans,black sesame,walnuts and mulberry as the main raw materials,a dietary fiber mixing powder for young athletes was prepared.The experiment first optimized the amount of auxiliary materials of dietary fiber powder,then analyzed its nutritional components and active ingredients,and finally studied the change of free radical clearance rate of dietary fiber powder under gastrointestinal Digestion.The results showed that when the addition of polydextrose was 2.5%,Glycerol monostearate was 0.25%,and Maltitol was 10%,the preparation condition and taste of dietary fiber mixing powder were good,and the average comprehensive score reached 77 points.The dietary fiber mixing powder prepared with the optimal ratio contains about 22%protein,21%total dietary fiber,and 8.5%total fat.At the same time,it contains rutin,Quercetin,flavonoids,polyphenols and other bioactive ingredients,which are rich in nutrition and functionality.After the gastrointestinal Digestion,the free radical clearance rate was effectively improved,ensuring the health of young athletes.
