摘  要:筛选陕西榆林、四川乐山、山西长治、吕梁兴县、忻州五寨、山西大同、晋中祁县和内蒙古乌兰察布,共计8个种植地区马铃薯作为研究材料。经过烘干、粉碎后,测定干物质、淀粉、可溶性蛋白质、类胡萝卜素、总黄酮和总酚的含量,进一步对比8个地区种植的马铃薯营养成分的含量差异,分析不同地区的环境、土壤和种植条件等对马铃薯中营养成分含量的影响。结果表明,不同种植区马铃薯营养成分有所不同,陕西榆林的马铃薯干物质和总黄酮含量相较于其他7个地区的较高,内蒙古乌兰察布相比于其他7个地区马铃薯的淀粉和可溶性蛋白质的含量较高,山西大同马铃薯的类胡萝卜素含量相比于其他7个地区的马铃薯含量较高,山西长治的马铃薯总酚含量较其他7个地区较高。通过分析不同种植区域马铃薯营养成分的差异,为种植高产量高质量的马铃薯及马铃薯食品加工行业提供参考。In this project,a total of eight potato planting areas were selected as research materials in Yulin,Leshan,Changzhi,Xingxian,Datong,Qixian,and Ulanqab.After drying and crushing,the contents of dry matter,starch,soluble protein,carotenoids,total flavonoids and total phenols were determined,and the differences in the nutrient content of potatoes grown in eight regions were compared,and the effects of environment,soil and planting conditions on the nutrient content of potatoes in different regions were analyzed.The results showed that the nutrient content of potatoes planted in different environments was different,the contents of dry matter and total flavonoids in Yulin were the highest compared with those in the other seven regions,the contents of starch and soluble protein in Ulanqab in Inner Mongolia were higher than those in the other seven regions,the content of carotenoids in Datong potato in Shanxi Province was higher than that in the other seven regions,and the total phenol content of potatoes in Changzhi in Shanxi Province was higher than that in the other seven regions.By analyzing the differences in the nutrient composition of potatoes in different planting areas,it provided a reference for planting high-yield and high-quality potatoes and potato food processing industry.
