摘  要:富马酸、乳酸指标控制是浓缩梨汁生产过程中的关键技术。本文依据浓缩梨汁生产工艺要求,在河北国投中鲁果蔬汁有限公司生产加工过程中对浓缩梨汁的富马酸、乳酸进行了在线检测及数据分析,旨在查找富马酸、乳酸产生和升高的原因,制定有效的综合控制措施,提高浓缩梨汁的产品质量,满足国内外客户需求,扩展国内外销售市场。The control of fumaric acid and lactic acid is the key technology in the production of concentrated pear juice.According to the production technology of concentrated pear juice,the current study conducted online testing and data analysis of fumaric acid and lactic acid during the process of concentrated pear juice production process in Hebei SDIC Zhonglu Fruit&Vegetable Juice Co.,LTD.,aiming to find out the causes for the generation and increase of fumaric acid and lactic acid.The result of this study would formulate effective comprehensive control measures to improve the product quality of concentrated pear juice and meet the needs of customers in and out of the country and expand domestic and foreign sales markets.
