摘 要:目的考察水产品马鲛鱼及马鲛鱼罐头制品中组胺的污染现状、暴露水平与风险评估。方法利用丹磺酰氯荧光试剂衍生联合高效液相色谱-紫外检测仪用于9份新鲜马鲛鱼和26份马鲛鱼罐头的批量样品分类分析,利用点评估模型分析样品在人体中的膳食暴露水平,利用无权重的食品安全指数评估样品的食品安全风险。结果马鲛鱼及其罐头制品的污染程度不同,马鲛鱼新鲜鱼肉中组胺未检出,但其罐头制品中组胺检出率为23.08%,组胺质量浓度为未超出检测范围(not detected,ND)~56.10mg/kg,组胺在人体中的暴露水平为31.33~135.25μg·kg^(-1)·d^(-1),暴露风险水平在年龄和地区呈现不同趋势,食品安全指数为0.0029~0.0126。结论新鲜马鲛鱼中组胺的暴露风险可忽略,马鲛鱼罐头制品中组胺的暴露风险处于可接受水平。综合分析得到马鲛鱼及其罐头制品的食品安全风险虽处于可控范围内,但鉴于组胺的健康风险阈值高,提示加强水产品罐头制品的全面风险监测十分重要。Objective To investigate the contamination status,exposure levels,and risk assessment of histamine contamination in aquatic and canned fishery products of Scomberomorus and its products.Methods Classification and analysis of 9 fresh and 26 canned Scomberomorus batch of samples using dansyl chloride fluorescence reagent derivation combined with high-performance liquid chromatography-ultraviolet detector.Samples were analyzed for dietary exposure levels in humans using a point assessment model,and the food safety risk of the samples was assessed using an unweighted food safety index.Results The contamination levels of Scomberomorus and its canned products canned varied.In particular,histamine was not detected in fresh fish of Scomberomorus but was found in 23.08%of its canned products.The mass concentration of histamine ranged from not detected(ND)to 56.10mg/kg,and human exposure levels of histamine was 31.33-135.25μg·kg^(-1)·d^(-1),with different trends in exposure risk levels by age and region,and the food safety index was 0.0029-0.0126.Conclusion The risk of exposure to histamine in fresh Scomberomorus can be ignored,and the risk of exposure to histamine in canned Scomberomorus products is at an acceptable level.Comprehensive analysis shows that while the food safety risks of Scomberomorus and its canned products are under control,it is important to strengthen comprehensive risk monitoring of canned aquatic products due to the high health risk threshold of histamine.
