摘 要:【目的】探究微酸性电解水(SAEW)对采后双孢蘑菇贮藏效果的影响,旨在为食用菌保鲜提供参考。【方法】对SAEW处理前后的双孢蘑菇进行感官评价,并测定菇体的褐变度、质量损失率、硬度、营养及抗氧化相关指标,探讨SAEW处理对双孢蘑菇贮藏品质的影响。【结果】与无菌水处理的对照(CK)相比,SAEW处理的双孢蘑菇能维持较低的褐变度、质量损失率;贮藏10 d,SAEW组的褐变度为33.18,CK组则高达54.16,CK组为SAEW组的1.63倍。SAEW处理的双孢蘑菇能保持较高的硬度及可溶性固形物、可溶性糖、可溶性蛋白含量,营养物质流失少。SAEW处理的双孢蘑菇还能保持较高的过氧化氢酶(CAT)活性、总超氧化物歧化酶(T-SOD)活性、抗坏血酸(AsA)含量、谷胱甘肽(GSH)含量、类黄酮含量,维持菇体的抗氧化能力,避免过氧化氢(H_(2)O_(2))、超氧阴离子(O^(-)_(2))过度积累;贮藏10 d,SAEW组双孢蘑菇的CAT活性、T-SOD活性、AsA含量、GSH含量、类黄酮含量分别为CK组的1.30、1.07、1.07、1.05、1.20倍,H_(2)O_(2)、O^(-)_(2)浓度分别较CK组下降了1.18、0.01μmol·g^(-1)。【结论】SAEW可延缓双孢蘑菇品质劣变,延长货架期。【Objective】The effect of slightly acidic electrolyzed water(SAEW)treatment on the postharvest storage of Agaricus bisporus was investigated to provide reference for the preservation of edible fungi.【Method】The effects of SAEW treatment on the storage quality of A.bisporus were investigated by sensory evaluation before and after SAEW treatment,and the browning degree,mass loss rate,hardness,nutrition and antioxidant indexes of mushroom bodies were determined.【Result】Compared with the control group(CK)treatd with sterile water,A.bisporus treated with SAEW maintained lower browning degree and mass loss rate.After 10 days of storage,the browning degree of the SAEW group was 33.18,while that of CK group was as high as 54.16,which was 1.63 times of the SAEW group.The SAEW group maintained higher hardness,soluble solids,soluble sugars,soluble protein contents,implying reduced nutrients loss.A.bisporus treated with SAEW maintained good antioxidant capacity with high catalase(CAT)activity,total superoxide dismutase(T-SOD)activity,ascorbic acid(AsA)content,glutathione(GSH)content,and flavonoids content,therefore avoiding excessive accumulations of hydrogen peroxide(H_(2)O_(2))and superoxide anion(O^(-)_(2)).After 10 days of storage,the CAT activity,T-SOD activity and contents of AsA,GSH and flavonoids in A.bisporus of the SAEW group were 1.30,1.07,1.07,1.05 and 1.20 times of the CK group,respectively.Meanwhile,the contents of H_(2)O_(2)and O^(-)_(2) were decreased by 1.18 and 0.01μmol·g^(-1),respectively,compared with the CK group.【Conclusion】SAEW treatment can delay the quality deterioration of A.bisporus and prolong its shelf life.
